   The blessing cup — lightest of the three, and the one you are not allowed to refuse.

• Green beans are washed and roasted in front of the guests, never before they arrive.
• The jebena is never rushed; the pour is high so the coffee can breathe.
• Popcorn or himbasha travels with the tray in most homes.
